My M.O. are fast and easy meals. I typically do not have the patience for meals that take hours to put together. This is probably due in large part to my mother’s cooking habits, though I have learned to teach myself how to cook over the years. As I like to tell people, “I went to college and discovered I liked vegetables.”
My mom does not like really any veggies outside of salads and mushrooms, therefore when I began cooking meals on my own I began to experiment. So I have learned to slap my own meals together and will do my best to share my quick and easy meals from breakfast, lunch and dinner.
This foodspiration of mine came while shopping at Sam’s Club (which by the way has amazing deals on frozen seafood) when I stumbled upon a steal of a deal on salmon filets. The frozen filets are individually wrapped, perfect for meals on the fly and meals for one (or many.)
You may bake the filets, but since it is spring, they are the perfect experiment for my grill. Now this was my second go at grilling my new salmon filets. The first time I tried a homemade citrus glaze that was just okay. This time I found the perfect, easy compliment to my fishy treat: Kikkoman Teriyaki Baste & Glaze.
You can find this glaze at your local super market. Just remember to look for the low sodium and preservative kind.
Simply put your salmon filets on aluminum foil on the grill, brush on the glaze and cook 8-10 minutes on each side, brushing the glaze on each time you flip. You will know the salmon is done when it starts to flake and peel apart easily. You may also want to brush on more glaze after you are finished cooking as it will cook off throughout the process.
The perfect pairing for my salmon: sauteed veggies. Prep/cut the veggies when you first put the salmon on the grill. Then, I put these on the stove toward the end of cooking my salmon as they take just a few minutes to cook.
You may choose any veggies you like. I chose what I had on hand in zuchinni, mushrooms, red pepper and broccoli. Added a bit of water for cooking (instead of oil), sprinkled on lemon pepper, garlic and Worcester sauce for seasoning.
